Creamy Tomato Tortellini Soup

INGREDIENTS:

4 cloves of garlic (minced)
4 tablespoons of olive oil
4 cans (10oz) condensed tomato soup
½ cup of sun dried tomatoes (chopped)
4 cups half and half
4 cups chicken stock
½ small fresh onion (fine diced)
2 table spoons of Italian seasoning
1 teaspoon salt
1 teaspoon pepper
1 bag of V's 20oz Tortellini of choice
1 cup shredded Romano or Parmesan cheese

DIRECTIONS

Sauté garlic in a large stock pot over medium heat until golden brown. Be sure not to over brown.
Add tomato soup, tomatoes, half & half, stock and spices. Bring to a simmer. Once simmering, add
Tortellini out of the bag and cook 5-6 minutes.
Ladle into bowls and top with cheese to serve.
