Italian Sausage Tortellini Soup

Italian Sausage Tortellini Soup

INGREDIENTS:

4 oz of Italian sausage (hot or mild) (casings removed)
1 cup of diced onions
2 cloves of garlic, minced
6 cups of beef stock
½ cup water
½ cup red wine
4 fresh tomatoes (chopped)
½ teaspoon dried basil
½ teaspoon dried oregano
1 cup V's spaghetti sauce
1 zucchini (chopped)
1 green bell pepper (chopped)
1 tablespoon chopped fresh parsley
2 tablespoon grated Romano cheese
1 bag V's Cheese Tortellini

DIRECTIONS

Place sausage in a large pot over medium heat for 10 minutes or until browned. Drain off excess fat. Add onions and garlic, sauté for 5 minutes. Next add beef stock, water, wine, tomatoes, basil, oregano and sauce. Bring to a boil, reduce heat and simmer 30 minutes. Skim off any fat that may surface. Add zucchini, tortellini (out of the bag) green peppers and parsley. Simmer for 10 minutes and ready to serve. Garnish with cheese.
