Tricolor Tortellini Salad
INGREDIENTS
1 package of V's Tri Color Tortellini
½ lb prosciutto or ham, sliced and cubed
½ lb smoked turkey, sliced and cubed
½ lb provolone cheese, cubed
1 cup peas
2 carrots, grated
½ large red bell pepper, thinly sliced
½ cup of V's Italian Salad dressing
PREPARATION
- Cook Tortellini in a large pot of boiling water according to packaging directions.
- Rinse with cold water until cold and drain well.
- Place cooked Tortellini in a large bowl and toss with Italian dressing.
- Add prosciutto, turkey and provolone, peas, carrots and bell peppers. Toss well, cover and refrigerate 30 minutes.
- Toss again to redistribute dressing when serving.
