Tortellini with Mushrooms and Prosciutto

Tortellini with mushrooms and prosciutto (serves six)

Ingredients:

1 package of V's Cheese Tortellini
2 tablespoons olive oil
1 large onion, chopped
6 ounces prosciutto, copped
2 tablespoons of fresh garlic, finely chopped
1 teaspoon of crushed red pepper flakes
1 teaspoon of black pepper
1 cup pof dry white wine
2 cups of mushrooms, chopped
1 Lg Green Bell Pepper, diced
1 cup of green onions, chopped
1 cup of frozen peas
1 ½ cups whipping cream
½ cup fresh parsley, chopped
½ cup fresh basil, chopped
1 cup Parmesan or Romano cheese

Preparation:

  1. Cook Tortellini in a large pot of boiling water according to packaging directions.
  2. Heat oil in a large sauce pan over high heat. Add onions, prosciutto, garlic, red pepper and black pepper. Sautee until onion is golden brown. Add wine and bring to a low boil.
  3. Add mushrooms, bell peppers, green onions and peas. Simmer until most liquid is evaporated (about 5 min.) Add cream and boil until sauce begins to thicken.
  4. Add cooked and drained Tortellini, parsley, basil and cheese. Simmer until sauce coats pasta. Season to taste with salt and pepper. Transfer to a large bowl & serve.
