Tortellini with Mushrooms and Prosciutto
Tortellini with mushrooms and prosciutto (serves six)
Ingredients:
1 package of V's Cheese Tortellini
2 tablespoons olive oil
1 large onion, chopped
6 ounces prosciutto, copped
2 tablespoons of fresh garlic, finely chopped
1 teaspoon of crushed red pepper flakes
1 teaspoon of black pepper
1 cup pof dry white wine
2 cups of mushrooms, chopped
1 Lg Green Bell Pepper, diced
1 cup of green onions, chopped
1 cup of frozen peas
1 ½ cups whipping cream
½ cup fresh parsley, chopped
½ cup fresh basil, chopped
1 cup Parmesan or Romano cheese
Preparation:
- Cook Tortellini in a large pot of boiling water according to packaging directions.
- Heat oil in a large sauce pan over high heat. Add onions, prosciutto, garlic, red pepper and black pepper. Sautee until onion is golden brown. Add wine and bring to a low boil.
- Add mushrooms, bell peppers, green onions and peas. Simmer until most liquid is evaporated (about 5 min.) Add cream and boil until sauce begins to thicken.
- Add cooked and drained Tortellini, parsley, basil and cheese. Simmer until sauce coats pasta. Season to taste with salt and pepper. Transfer to a large bowl & serve.
